Creamy Leftover Ham Tortellini


After a holiday dinner what do you do with the leftovers? My solution, make a new recipe with them. This Creamy Leftover Ham Tortellini is great for using up leftover ham after Christmas, Easter, or whenever you have ham.


PREP TIME: 10 minutes

COOK TIME: 20 minutes

TOTAL TIME: 30 minutes

YIELD: 4 servings


INGREDIENTS:

1 tablespoon Butter

1 cup Onion, diced

1 cup Ham, diced

1 cup Chicken Broth

9 ounces Tortellini

Salt, to taste

Pepper, to taste

1 cup Peas

1/4 cup Cream

1 cup shredded Cheddar Cheese


DIRECTIONS:

1. Melt butter in a large pan on medium heat. Add onion and cook until softened. Add ham and cook until heated through.

2. Add chicken broth and tortellini. Bring to a simmer and let cook for 5 minutes. Season to taste with salt and pepper.

3. Add peas and stir in cream and cheese. Mix in cheese until fully melted. Enjoy!
