Crustless Taco Pie


People often ask me what are some keto meals that my entire family likes. This is definitely one of those meals. We have Taco Pie often.


PREP TIME: 10 minutes

COOK TIME: 40 minutes

TOTAL TIME: 50 minutes

YIELD: 6 slices


INGREDIENTS:

1 pound Ground Beef

1 packet Taco Seasoning

4 eggs

2/3 cup Heavy Cream

1 cup shredded Colby Jack Cheese

1/4 cup Salsa

Non-Stick Cooking Spray

OPTIONAL TOPPINGS:

Cilantro, chopped

Sour Cream

Diced Tomatoes

Salsa

Guacamole



INSTRUCTIONS:

1. Preheat oven to 350°F.

2. Brown 1 pound of ground beef. Drain excess grease.

3. Stir in 1 packet of taco seasoning

4. In a large bowl, whisk 4 eggs with 2/3 cup of heavy cream.

5. Stir in the taco meat along with 1/2 cup of freshly shredded colby jack cheese and 1/4 cup of salsa.

6. Pour the mixture into a greased pie pan.

7. Top with another 1/2 cup of shredded colby jack cheese.

8. Bake at 350°F for 30-40 minutes.

9. Slice the pie into 6 even slices. Top with any optional toppings that you would like. We like cilantro, sour cream diced tomatoes or homemade guacamole.
