Easy Ranch Meatloaf


This easy Ranch Meatloaf recipe has all the flavor you'd expect from a delicious meatloaf for an easy entree that's quick to prep and great with roasted or mashed potatoes and a side of veggies. Four ingredients is all it takes to create this weeknight staple that's the centerpiece to a proper family dinner.


PREP TIME: 5 minutes

COOK TIME: 1 hour 15 minutes

STAND TIME: 15 minutes

TOTAL TIME: 1 hour 35 minutes

YIELD: 6 servings


INGREDIENTS:

3/4 pound Ground Beef

1 Egg, beaten

2 tablespoons (1 packet) Ranch Seasoning & Salad Dressing Mix

1/3 cup Dry Breadcrumbs


OPTIONAL RANCH ROASTED RED POTATOES:

Red Potatoes, Diced

2 tablespoons Olive Oil

2 tablespoons (1 packet) Ranch Seasoning & Salad Dressing Mix


INSTRUCTIONS:

1. Preheat oven to 350°F.

2. Mix all ingredients for the meatloaf together in a large bowl, but avoid excessive handling for a moist meatloaf. Form into a loaf and place in a baking dish or loaf pan.

3. (Optional): If making the accompanying Ranch Roasted Red Potatoes, wash and dice approximately 3 pounds red potatoes. In a large bowl toss with 2 tablespoons of olive oil. Sprinkle the Ranch Seasoning & Salad Dressing Mix over the potatoes and stir well to coat evenly.

4. Cover tightly with foil. Bake for 45 minutes. Remove the foil and set aside. Continue to bake, uncovered, for an additional 30 minutes or until the internal temperature reaches 165°F and the potatoes are fork tender.

5. Remove from oven and let the meatloaf stand covered with the foil set aside for 10-15 minutes before slicing. Serve hot with your favorite sides and enjoy!
