Loaded Broccoli Potato Soup


Thick and creamy loaded broccoli potato soup is full of delicious vegetables and delicious seasonings. It's hearty and filling!


PREP TIME: 10 minutes

COOK TIME: 30 minutes

TOTAL TIME: 40 minutes

SERVINGS: 8 servings


INGREDIENTS:

2 (14.5 ounce) cans Chicken Broth

2-3 large Carrots, peeled and sliced

4 medium Potatoes, peeled and cubed into bite size pieces

1 teaspoon Onion Powder

2 small Heads Broccoli, washed and diced small

3 tablespoons Butter

1/3 cup All-Purpose Flour

3 1/2 cups Milk

4 cups shredded Sharp Cheddar Cheese

1 teaspoon Salt

1/2 teaspoon Garlic Powder

1/2 teaspoon Black Pepper

6 slice Bacon, cooked and chopped


DIRECTIONS:

1. In a large pot combine chicken broth, carrots, potatoes, and onion powder. Bring to a boil, cover and simmer for about 10 minutes.

2. Add broccoli, cover and simmer for an additional 10 minutes.

3. While simmering, melt butter in a large saucepan. Whisk in the flour and cook for another minute (or until golden brown). Whisk in milk and cook for an additional 5 minutes or until the sauce thickens.

4. Add cheese and stir until it is all melted. Add salt, garlic powder and pepper. Pour cheese sauce into the large pot and stir until well combined.

5. Add more milk for a thinner consistency and add any additional salt and pepper needed. Top with bacon pieces.

6. Serve warm.
