Slow Cooker Meatball Subs Recipe

The weather is starting to get chilly, which means it's time for me to break out my slow cooker and start making some good old-fashioned comfort food. Two of my favorite are Italian food and great sandwiches! Put them together and you've got one of the most perfect dishes ever...Slow Cooker Meatball Subs!


PREP TIME: 10 minutes

COOK TIME: 6 hours

TOTAL TIME: 6 hours 10 minutes

Servings: 6 sandwiches


INGREDIENTS:


1 1/2 pounds Ground Chuck

1 Egg, beaten

1 1/4 cups Italian Seasoned Breadcrumbs

2 tablespoons chopped Fresh Parsley

3 tablespoons fresh Garlic, minced

1 (28 ounce) can Crushed Tomatoes with Basil

1 (3 ounce) can Tomato Paste

1/4 cup Olive Oil

2 teaspoons Salt, or to taste

1 teaspoon Cracked Black Pepper, or to taste

1 (8 ounce) package shredded Mozzarella Cheese

1 package (6 count) Hoagie Rolls


DIRECTIONS:


1. In your slow cooker, combine tomato paste, crushed tomatoes, olive oil, salt, pepper, and 2 tablespoons minced garlic.

2. In a large bowl, use your hands to mix together the ground chuck, egg, breadcrumbs, fresh parsley and 1 tablespoon of minced garlic. Combine well.

3. Divide the meat mixture into 24 meatballs.

4. Place the meatballs in the sauce mixture and cook on LOW for 4 to 6 hours.

5. Put about 4 meatballs on each sub roll and ladle some of the sauce over the meatballs

6. Top with the Mozzarella cheese.

7. Preheat the Broiler to HIGH.

8. Broil for 3 minutes or until the cheese is completely melted.

9. Cool for a minute or two and ENJOY!
