Blueberry Crumble Bars


This is a quick and easy dessert that uses fresh blueberries. It can be served warm, similar to a cobbler, or cold as bars.


PREP TIME: 10 minutes

COOK TIME: 35 minutes

TOTAL TIME: 45 minutes

YIELD: 12 bars


INGREDIENTS:

1 1/2 cups All-Purpose Flour

1/4 cup Sugar

1/4 cup Brown Sugar

1/2 teaspoon Baking Powder

1 pinch Salt

1 Egg

1 teaspoon Vanilla Extract

1/2 cup Unsalted Butter, cold and cut into cubes


FILLING:

1/2 tablespoon Cornstarch

1/4 cup Sugar

1 tablespoon Lemon Juice

2 cups Fresh Blueberries


INSTRUCTIONS:

1. Line an 8x8 inch baking dish with parchment paper.

2. Preheat oven to 375° Fahrenheit.

3. In a mixing bowl, whisk flour, sugar, brown sugar, baking powder and salt.

4. In a small mixing bowl, whisk egg and vanilla. Add egg mixture and butter to flour mixture and use a form to make it crumbly and combined. Press half the mixture into the pan in an even layer.

5. In a separate bowl, combine the blueberries with sugar, lemon juice and cornstarch. Toss. Pour blueberries over crust. Them crumble the rest on top.

6. Bake for 35 minutes or until top is golden brown. Let cool then cut into 12 equals squares. Enjoy!
