Creamy Ham Salad

What to do with those last little bits of ham leftovers? Make Ham Salad, of course! And then enjoy it as a yummy sandwich filling or as a topping on crackers. Either way, it's delicious.


PREP TIME: 10 minutes

COOK TIME: 0 minutes

CHILL TIME: 1 hour

TOTAL TIME: 1 hour 10 minutes

SERVINGS: yields approximately 2 cups or 8 servings


INGREDIENTS:

2 cups fully cooked Ham

1 Hard-Boiled Egg

1/4 cup Sweet Pickles, cubed (or Sweet Pickle Relish)

1/3 cup Mayonnaise

1/4 teaspoon Black Pepper


INSTRUCTIONS:

1. Process ham in a food processor until finely chopped, or mince finely with a knife.

2. Finely chop egg and combine with ham. Add cubed pickles and pepper. Stir in mayonnaise, adding enough to make the salad smooth and creamy.

3. Chill for about an hour before serving to let the flavors meld together.
