Easy Mini Egg Muffins with Sausage and Cheddar


Love easy breakfast ideas? If so, you're going to love these yummy mini egg muffins! Filled with sausage, cheddar and onion, they make a perfect egg breakfast that can be enjoyed both at home or on-the-go.


PREP TIME: 15 minutes

COOK TIME: 20 minutes

TOTAL TIME: 35 minutes

SERVINGS: 12 mini egg muffins or 6 regular size egg muffins


INGREDIENTS:

-Non-Stick Cooking Spray

-3 Large Eggs

-2 tablespoons Milk

-1/4 cup Frozen Hash Browns

-1/3 cup Spicy Breakfast Sausage (I use Jimmy Dean's)

-1/3 cup White Onion, diced

-1/3 cup Shredded Sharp Cheddar Cheese

-Salt, to taste

-Pepper, to taste

-Additional Cheese, Sausage & Parsley for Garnish, (optional)


DIRECTIONS:

1. Preheat the oven to 350 degrees Fahrenheit.

2. Spray a muffin tin with cooking spray.

3. Brown the sausage on the stove top over medium heat.

4. Set the sausage aside and use the grease in the pan (there should only be a small amount) to saute the onions.

5. Fill muffin tins evenly with hash browns.

6. In a small bowl combine the eggs and milk. Whisk thoroughly. 7. Add the sausage, onion, cheddar cheese, salt and pepper.

8. Spoon over the hash browns already in the muffin tin.

9. Bake at 350 degrees Fahrenheit for 20 minutes.

10. Garnish with extra cheese, sausage ad chopped parsley (optional).

11. Freeze leftovers for an easy breakfast any day of the week.
