Grilled Cheese Reuben Sandwiches

The Reuben Sandwich is a North American grilled sandwich composed of corned beef, Swiss cheese, sauerkraut, and thousand island dressing, grilled between slices of rye bread. It is associated with kosher-style delicatessens, but is not kosher because it combines meat and cheese.

PREP TIME: 10 minutes

COOK TIME: 10 minutes

TOTAL TIME: 20 minutes

YIELD: 12 sandwiches


1 loaf sliced Rye Bread

12 tablespoons Spreadable Butter or Margarine

12 tablespoons Thousand Island Dressing or Russian Dressing

12 slices Swiss Cheese

1 pound thinly sliced Deli Corned Beef

1 (15.5 ounce) can Sauerkraut, drain, rinsed and pressed dry

Non-Stick Cooking Spray


1. Lightly butter one side of 24 slices of rye bread.

2. Spread 1/2 tablespoon Thousand Island or Russian Dressing on 1 slice of bread, place 1 slice Swiss cheese on to of the dressing, top with 1/12th of the sauerkraut, top with 1/12th of the corned beef, spread another 1/2 tablespoon of Thousand Island or Russian dressing on a second piece of bread and [lace butter side up on the sandwich. Repeat step 2 to assemble the next 11 sandwiches.

3. Generously spray a skillet with non-stick cooking spray. Heat the skillet over medium heat until nice and hot (about 2 minutes.)

4. Place one of the sandwiches on the preheated skillet. Allow to cook, undisturbed, until golden crisp. (Approximately 3 minutes.) Flip the sandwich over and cook that side until golden crisp. (Approximately another 3 minutes). Repeat with the remaining sandwiches.

5. Slice each sandwich in half and enjoy while still warm!
