Hoppin' John


The southern tradition of eating Hoppin' John on New Year's Day is thought to bring a prosperous year filled with luck. Try this easy Hoppin' John recipe!


PREP TIME: 15 minutes

COOK TIME: 1 hour

TOTAL TIME: 1 hour 15 minutes

SERVINGS: 10 servings


INGREDIENTS:

2 tablespoons Olive Oil

1 Red Bell Pepper, diced

1 Jalapeno Pepper, diced

1/2 small Onion, diced

2 stalks Celery, diced

1 tablespoon Butter

3 (15.5 ounce) cans Black-Eyed Peas, drained

1 1/2 cups Chicken Broth

8 ounces Diced Ham

1 (14.5 ounce) can Diced Tomatoes

2 teaspoons Garlic Powder

1 teaspoon Salt

1 teaspoon Black Pepper

1/2 teaspoon Ground Red Pepper (Cayenne)

2 tablespoons White Vinegar

4 cups Cooked Rice


DIRECTIONS:

1. In medium stockpot, saute bell peppers, jalapeno peppers and celery in olive oil for 3 minutes. Add onion and butter, saute another minute.

2. Stir in black-eyed peas, chicken broth, diced ham, canned diced tomatoes, garlic powder, salt, black pepper, and ground red pepper. Bring to a boil, reduce heat and let simmer for 45 minutes, covered.

3. Stir in vinegar.

4. Serve over cooked rice.
