One Pot Velveeta Mac and Cheese with Ham and Broccoli

Updated: Oct 4, 2021

This easy one pot mac and cheese is loaded with protein and veggies. It's a comfort food that is easy to cook on the stove top and have on the table in less than an hour.

PREP TIME: 10 minutes

COOK TIME: 35 minutes

TOTAL TIME: 45 minutes

SERVINGS: 8 servings

INGREDIENTS:

1 pound Elbow Macaroni

16 ounces Velveeta Cheese, cubed

4 Garlic Cloves, minced

1 Yellow Onion, diced

2 cups Broccoli Florets, chopped into small pieces

1 pound Ham, Diced

1/2 pound Unsalted Butter (1 stick)

2 cups 2% Milk

2 cups Water

1 teaspoon Onion Powder

1 teaspoon Garlic Powder

1 teaspoon Seasoned Salt

1/4 teaspoon Black Pepper

DIRECTIONS:

1. In a large Dutch Oven, melt the stick of unsalted butter. Once the butter is melted add the onion and diced ham. Cook until the onion is translucent, about 4 minutes. Add the minced garlic and cook for 1 more minute.

2. To the pot add the milk, water, elbow macaroni, Velveeta, broccoli, onion powder, garlic powder, seasoned salt and black pepper. Stir until all of the cheese cubes are dissolved. Once boiling reduce the heat to a simmer. Cover the pot with a lid and boil 15-20 minutes, or until the elbow macaroni is tender and most of the liquid is absorbed, stirring frequently.

3. Turn off the heat, remove the lid and let sit for 10 minutes. Serve hot!
