Sour Cream and Garlic Red Skin Mashed Potatoes


An easy Steakhouse quality side dish to serve with your next meal!


PREP TIME: 10 minutes

COOK TIME: 20 minutes

FINISHING TIME: 5 minutes

TOTAL TIME: 35 minutes

SERVINGS: 6 servings


INGREDIENTS:

2 pounds Red Skin Potatoes, scrubbed and diced small (leave the skins on)

6 Garlic Cloves, peeled - trimmed - and smashed

1 medium Yellow Onion, diced

8 cups cool Water

2 tablespoons Kosher Salt, divided

4 tablespoons Unsalted Butter

1/2 cup Sour Cream

1/2 cup Milk

Fresh Ground Pepper, to taste


INSTRUCTIONS:

1. Place the diced red skin potatoes, smashed garlic cloves, diced onion, cool water and 1 tablespoon of the kosher salt into a large pot over high heat and bring to a boil.

2. Once the water is boiling rapidly set a timer for 20 minutes and allow the potatoes to cook.

3. Prick the potatoes with a fork to make sure they are tender. Once tender drain the water and return to the pan.

4. While the potatoes are still hot add in the butter, sour cream, milk and pepper to taste. Mash well with a hand mixer or a potato masher.

5. Serve hot and enjoy!
