Spinach and Pepper Jack Rolled Chicken Bundles

This is my husband's all time favorite protein that I make. I started making this little gem back after I had my first son and was trying to eat a little healthier to lose the baby weight back in 2004. I've been making


PREP TIME: 15 minutes

COOK TIME: 1 hour

Rest Time: 10 minutes

TOTAL TIME: 1 hour 25 minutes

SERVINGS: 6


INGREDIENTS:

3 boneless, skinless chicken breasts, cut in half horizontally

1 (16 ounce ) bag Fresh Baby Spinach

12 slices Hot Pepper Jack Cheese

1 cup Light Sour Cream

1 teaspoon Garlic Powder

1 teaspoon Onion Powder

1/2 teaspoon Salt, or to taste

1/2 teaspoon Pepper, or to taste

1 tablespoon Poultry Seasoning


INSTRUCTIONS:

1. Preheat the oven to 400 degrees Fahrenheit.

2. Prep a 9x13 inch baking dish by layering foil in the bottom and then spraying the foil with non-stick cooking spray. (Trust me, this chicken makes a huge mess. You do not want to skip the foil or the clean up will be difficult)

3, Place the spinach in a large microwave safe bowl and cook on HIGH temperature for 30 second increments, stirring between each interval, until wilted. Add in the sour cream, garlic powder, onion powder, salt and pepper and stir well to combine. Set aside.

4. Cut each of the chicken breasts in half horizontally. Place each half inside of a Ziploc bag and pound to about 1 inch thickness. Place each chicken breast into the prepared baking dish.

5. Place 2 slices of pepperjack cheese on each chicken breast. Top each chicken with about 1/2 cup of the spinach mixture. Gently roll the chicken into a bundle and place seam side down in the baking dish. Sprinkle the chicken breasts pieces with the poultry seasoning.

6. Cover with another sheet of foil and bake in the preheated oven for 1 hour.

7. Remove the chicken and take the foil off of the top. Let it sit for 10 minutes to let the juices reincorporate a bit.

8. Serve while warm with you favorite sides. I recommend Baked Potatoes and Baby Carrots.
