Taco Spaghetti


This tasty taco spaghetti kid friendly and easy for a weeknight meal. It's made with ground beef, spaghetti, taco seasoning, and ooey gooey, melted cheese.


PREP TIME: 5 minutes

COOK TIME: 25 minutes

TOTAL TIME:30 minutes

YIELD: 8 servings


INGREDIENTS:

2 tablespoons Olive Oil

2 pounds Lean Ground Beef

1/2 cup Yellow Onion, diced

2 packets Taco Seasoning

2 (10 ounce) cans Rotel Tomatoes

1 pound Spaghetti Noodles, broken in half, uncooked

4 cups Beef Broth

2 cups Colby Jack Cheese Blend, shredded

1/2 cup Cilantro, chopped

Salsa, for serving if desired


INSTRUCTIONS:

1. Heat the olive oil in a large 12-inch skillet over medium heat.

2. Brown the ground beef and onion in the skillet until the meat is no longer pink and the onions are soft and translucent.

3. Add the taco seasoning, Rotel tomatoes (including the juice), spaghetti noodles, and beef broth.

4. Bring to a boil over high heat. Once the broth comes to a boil, reduce the heat to medium-low, cover, and simmer for 15 minutes.

5. Remove from heat. Sprinkle half of the cheese into the pan and stir to distribute the cooked spaghetti and cheese throughout the pan.

6. Top with remaining cheese, cilantro and salsa if desired. Serve warm and enjoy!
